قابلی پلو؛ یک نام، هزار سلیقه
قابلی پلو نامش را از کابل گرفته، اما در هر گوشهٔ افغانستان رنگ و بوی خاص خود را دارد. اساس آن همیشه یکی است: برنج دانه‌دار و خوشبو که با گوشت نرم گوسفند یا گوساله و آب‌گوشتِ پرمزه دم می‌کشد، و رویش زردک‌های باریک و کشمش طلایی که با کمی روغن و شکر سرخ شده‌اند، می‌درخشد.
در بعضی خانه‌ها بادام و پسته را سخاوتمندانه رویش می‌پاشند، در جای دیگر زردک را کمی درشت‌تر می‌بُرند یا زیره و هیل بیشتری به دیگ می‌زنند. هر خانواده می‌گوید قابلی خودش بهترین است، و راستش همه حق دارند! این پلو در مهمانی‌ها و جشن‌ها در یک دیس بزرگ وسط دسترخوان گذاشته می‌شود تا همه دورش جمع شوند. اگر روزی مهمان یک خانوادهٔ افغان شدید، از آن‌ها بپرسید قابلی‌شان چه رازی دارد. 🍚

Kabuli Pulao takes its name from Kabul, yet in every corner of Afghanistan it carries its own colour and aroma. The foundation is always the same: fluffy, fragrant rice steamed with tender lamb or beef and a rich, flavourful broth, crowned with thin strips of carrot and golden raisins gently fried in a little oil and sugar.
In some homes, almonds and pistachios are scattered generously on top. In others, the carrots are cut a little thicker, or a bit more cumin and cardamom finds its way into the pot. Every family says its own pulao is the best, and honestly, each of them is right! At gatherings and celebrations, this pulao is set on a large platter in the middle of the dastarkhan so everyone can gather around it.
